Enjoy as a snack, dessert or with a warm cup of tea or dandelion coffee.
1 cup Almonds
1/2 cup roasted Almond butter
1 Tbsp Maple syrup
1 tsp Lemon or Lime zest or you can add simply organic lemon flavour (which contains lemon oil in a sunflower oil base)
1/4 cup desiccated and finely shredded coconut
2 Tbsp coconut oil Extra desiccated and finely shredded coconut for rolling the balls in
Place the Almonds in a food processor and blend or pulse briefly till you get semi-chunky to course sand consistency. Then add the rest of the ingredients and blend or pulse till well combined. Roll into balls and coat with the shredded coconut. I made about 14 small nut balls from this batch but you can make them larger if you prefer. Refrigerate so they hold more solid and don't crumble as easily. These nut balls can also be frozen and then defrosted as needed.
