I'm always on the lookout for simple recipes that are quick and easy to make. I have a busy schedule currently working 7 days per week and know how important it is to eat supportive foods as the quality of what we eat then feeds us back through the day.

Salmon is quick and easy to cook. I usually cook fresh salmon on the BBQ which gives it a nice smokey flavour and the classic black stripes as you will see in the picture. Most people know how to bbq so I won't present too much on this now. But the recipe I will share below is a salmon recipe which was inspired by a friend of mine who also has a busy schedule. It uses frozen salmon pieces - thankfully these days frozen fish is generally of good quality and you can buy them in single serve portions (a bag of single serve salmon pieces). The great thing about the frozen fish is that you do NOT need to defrost it beforehand. I often come home late from work, pull out 2-4 pieces (with 1 for dinner and one spare for my lunch the next day and likewise for my beautiful husband) place them on a sheet of baking paper on the oven tray with spices and olive oil and then pop them straight into the oven still frozen, meanwhile I go take a shower and get changed into my pyjamas and then when I am ready I get to sit down to a lovely freshly cooked salmon fillet with what seems like no effort at all!


  • 2-4 pieces of frozen portions of salmon (or Barramundi works well too)

  • Olive oil (can use plain or herb/garlic infused one)

  • Spices of your choice to sprinkle on the fish (we love sumac and garlic and dill and a blend of others too depending on the day).

Method: Pre-heat oven to 230 degrees celsius, fan forced and grill too. Unwrap the fish pieces and place on a baking tray with a baking sheet on it. Sprinkle lightly with olive oil and spices and then pop straight into the oven for baking (note - I don't even wait for the oven to get hot, I just pop the fish in when I am ready to do so). I generally don't time the cooking it as it depends on the size of the pieces as to how long to cook it - and it also depends on the oven you have, but about 25-30 mins sounds about right. Once cooked through, you can remove the skin and put the skins back under the grill for a few minutes to make them super crisp and delicious! Enjoy with a side salad or vegetables!
