BROCCOLI WITH MIXED SEAWEED

This is a simple and quick soup to make, busting with nutrients.
To build it up you can also add a can of tuna and some fried greens (recipe for the greens to come next week).
Ingredients:
5 shallots, chopped fine
Olive oil for sautéing the shallots Spices of your choice (I used sumac, parsley, dill...)
3 heads of Broccoli, chopped up
1 handful of mixed dried sea weed (soak this in water first)
250 mis vegetable stock
Extra water as required
Method:
Sauté the shallots in the olive oil in a large pan till slightly browned. Then add the broccoli pieces and the spices stir-ing through, top up with the vegetables stock and add the seaweed, then add more water if needed till the vegetables are almost covered but not quite. Bring to a boil then simmer for about 20 mins or till the vegetable are tender. Then allow to cool slightly before blending with a food processor till it reaches the desired consistency (smooth or chunky). Serve as is or with some fish pieces, avocado slices to garnish, or some more stir fried greens mixed in. Enjoy!
